Is there a remote control to actuate an old ceiling fan? Can you run variable speed?

I would not use a modern remote, but you can use a variable speed made for ceiling fans. Andrew Block has some that work quite well. You might check with him.

I have found that a 5 amp KB works well.

I'll second Dave's suggestion for the KB controller. I've got 2 antique ceiling fans running on them.

So I guess the speed coil is not needed then. Does the variable controller go very slow?

Somebody ripped out one of the wiresgoing to the stator. Without the speed coil where do I hook up the incoming wire to?

Not really possible to tell in your pic. Maybe zoom in a little where the one wire comes out. Obviously there should be two wires going to the stator.
